The malt of barley and wheat is stored in the malt silo before being milled by the malting mill.
A mashing pan is used for frying and mashing.In this process, about a third of the mash (a mixture of malt and water) is boiled from the malt barrel, thereby destroying the cell walls of the grain and promoting the absorption of starch by enzymes within the cells.The conversion of starch to maltose (sugar) is facilitated by pumping the potion back into the syrup barrel.In other words, boiling the potion helps to convert it into sugar.
Mash TunThe crushed malt is mixed with warm brewing water in the mash tun. The resulting mash is then heated slowly and allowed to rest at certain temperatures for differing lengths of time, thus helping the enzymes contained in the malt to convert proteins into simpler products. The enzymes are also responsible for the most important aspect of mashing, namely the breaking down of starch into the malt sugar (maltose) that is later converted by yeast into alcohol and carbon dioxide.The mashing process lasts between 150 to 200 minutes, depending on the type of beer being brewed. During this time, the mash is heated to 75°C, after which it is pumped into the lauter tun.
The purpose of the Lauter VAT is to separate the liquid and solid parts of the mash to obtain the wort (malt extract).In this process, the liquid part of the mash flows into one of two swirling POTS for about two hours, while the solid part (used grain) is blocked by the slatted false bottom of the VAT.The used grain is transferred to the used grain storehouse, which is taken by farmers for animal feed.
The wort is now boiled with hops in either one of the two whirlpool kettles to achieve the extraction of hops resins
The boiling process lasts about an hour for another important reason:
The evaporation of excess water
Destruction of enzyme
Protein precipitation/coagulation (fracture formation)
Dissipation of certain volatile components
After boiling, the wort is pumped into the tangents of the same whirlpool pot, making the hot wort spin.This process leaves hot cracks (proteins that precipitate and solidify during boiling) at the bottom and center of the vortex (teacup effect).After about 30 minutes, the liquid (now called bitter wort) can be separated from the hot vents and pumped into the wort cooler.
